Yeh viral condiment hai – Maggi, paratha, chaat, fries pe mast lagta hai. Sweet-tangy with banana flavor.

Ingredients (makes ~500ml jar):

  • 4-5 ripe bananas (overripe best, ~500g mashed)
  • 1 medium onion, finely chopped
  • 4-5 garlic cloves, minced
  • 1-2 green chillies (desi twist ke liye, optional)
  • ½ cup vinegar (sirka ya apple cider)
  • ½ cup jaggery (gud) or brown sugar
  • 2 tbsp tomato paste (optional, for color)
  • 1 tsp ginger grated
  • Spices: ½ tsp turmeric, ½ tsp red chilli powder, ½ tsp garam masala, salt to taste
  • 1 cup water
  • 1 tbsp oil

Steps:

  1. Heat oil in a pan, sauté onion, garlic, ginger aur green chilli 3-4 min tak golden hone tak.
  2. Add mashed bananas, tomato paste, spices, salt, gud/jaggery – mix well.
  3. Pour vinegar + water, boil karo, phir low flame pe 10-15 min simmer karo (stir karte raho, thick hone tak).
  4. Blend smooth kar lo (mixer mein), taste check karo (aur sweet/tangy adjust).
  5. Cool karke sterilized glass jar mein store – fridge mein 2-3 weeks chalega.

Tips: Desi twist ke liye extra jeera powder ya hing daal sakte ho. Pair with samosa ya pakode!

2. Raw Banana Powder (Homemade – Gluten-Free Superfood)

Baby food, smoothies, baking ke liye best. High resistant starch, weight loss help karta hai.

Ingredients:

  • 4-5 very raw green bananas (kachcha kela, firm wale)

Steps:

  1. Bananas ke dono ends cut karo, skin pe deep slits banao (knife se).
  2. Peel karo (skin easily utregi).
  3. Thin slices karo (mandoline ya slicer use karo – 2-3mm thick).
  4. Tray pe spread karo, muslin cloth se cover karke dhoop mein 2-3 din dry karo (Patna ki garmi mein fast dry hoga). Ya oven/dehydrator 50-60°C pe 6-8 hours.
  5. Crisp hone ke baad mixer/grinder mein fine powder banao. Sieve karo coarse bits nikaalne ke liye.
  6. Airtight jar mein store – 4-6 months shelf life.

Usage Ideas: 2 tbsp powder + dahi + gud = quick porridge. Ya smoothie mein daalo.

3. Banana Flour Soft Roti / Paratha (Gluten-Free Desi Recipe)

Raw banana flour se banao – maida free, healthy roti.

Ingredients (4-6 rotis):

  • 1 cup raw banana flour (upar wali recipe se)
  • ½ cup warm water (adjust as needed)
  • ½ tsp salt
  • 1 tsp oil/ghee
  • Optional: ¼ tsp ajwain for flavor

Steps:

  1. Bowl mein flour + salt mix karo.
  2. Thoda-thoda water add karke soft dough gundo (banana flour sticky hota hai, oil lagake manage karo).
  3. 10 min rest do.
  4. Small balls banao, dry flour pe bel lo (thick roti better, thin mat karna).
  5. Tawa pe medium flame pe dono taraf sek lo, ghee brush karo.
  6. Soft aur flexible rotis ready!

Tips: Dough tight mat karna, warna phat jaayegi. Sabzi ke saath mast.

Serve: Chilled khao ya garam roti ke saath.

Ingredients:

  • 4-5 ripe bananas, sliced (½ inch thick)

Steps:

  1. Banana slices tray pe freezer mein 2-3 hours freeze karo.
  2. Chocolate + coconut oil microwave mein 30-60 sec melt karo (stir smooth).
  3. Frozen slices ko fork pe pick karo, chocolate mein dip karo.
  4. Excess drip off karo, tray pe rakho, optional toppings sprinkle.
  5. Freeze 30 min aur – ready!

Tips: Dark chocolate use karo for healthy. Patna garmi mein cooling treat!
